Bologna, 28 novembre 2008 "Riesci a mangiare fuori casa? Una domanda apparentemente banale, che diventa però essenziale, se la si rivolge a una persona celiaca. A questa domanda il 54% dei celiaci, di Bologna e provincia, afferma di essere costretti a portarsi il cibo da casa o nel 2% a rinunciarvi.
L'indagine è stata condotta dall'Azienda Usl di Bologna in collaborazione con l'Associazione Italiana Celiaci Emilia Romagna. Un problema non da poco se si considera che per scelta o per necessità, impegno lavorativo o scolastico, mangia fuori casa almeno mensilmente il 94% degli intervistati. In particolare il 49% pranza in mensa, più precisamente il 23% da 5 a 20 volte al mese, il 18% da 1 a 10 volte al mese, il 17% più di 20 volte al mese.
Le mense aziendali quasi mai forniscono prodotti dietetici senza glutine, garantiti, invece, dalle mense scolastiche ed ospedaliere. La situazione non migliora al ristorante. Lunedì 1 dicembre a Bologna si svolgerà un convegno che farà il punto sullo stato di attuazione della Legge 123/2005 'Norme per la protezione dei soggetti malati di celiachia'. Una legge che fa specifico riferimento a tutti gli interventi che devono essere attuati per garantire la somministrazione di alimenti senza glutine nella ristorazione pubblica.
L'appuntamento riunisce insieme esperti provenienti da tutta Italia, rappresentanti dei Celiaci, Ministero della salute, Regioni, Ausl, Società Scientifiche, ditte di ristorazione per un confronto non rituale ma volto a trovare concrete soluzioni ai problemi dell'alimentazione per i celiaci dentro e fuori casa. Nel pomeriggio una tavola rotonda affronterà il problema della produzione senza glutine nella ristorazione commerciale e nei laboratori artigianali.
"L'alimentazione -
La celiachia è una intolleranza permanente al glutine, proteina che si può trovare in alimenti quali il pane, la pasta, i biscotti, la pizza e in ogni altro prodotto contenente cereali quali frumento, orzo, segale, farro, avena. Quando una persona affetta da questa malattia ingerisce alimenti contenenti glutine, si scatena una reazione autoimmune, che può colpire vari organi e tessuti, dall'intestino, al cervello, alla pelle, alle ossa.
In Italia i soggetti diagnosticati sono circa 60.000 ( Ministero della Salute 2006), ma si stima che, in realtà il loro numero sia almeno dieci volte superiore con un rapporto femmine-
