Trucchi per la panificazione senza glutine.

1) Il tipo di lievito:
La panificazione senza glutine consente di utilizzare il cd. lievito di birra fresco o secco (deve invece essere escluso il lievito madre perché contenente glutine e il lievito chimico in quanto elemento a rischio).
Utilizzare il lievito secco o quello fresco e' indifferente ai fini del risultato finale, a condizione però che si adottino gli opportuni accorgimenti.
Il lievito fresco ha tempi di conservazione molto brevi e più passano i giorni più diminuisce la sua efficacia. Può essere congelato nel frizer, in questo caso, però, occorre tener presente che al momento dell'uso esso avrà perso circa il 30% della sua efficacia e conseguentemente sarà necessario aumentare le dosi in misura corrispondente.
Il lievito fresco si presenta in forma di piccoli panetti del peso di circa 25 g. l'uno, ai fini della panificazione deve essere sciolto in un po' d'acqua tiepida (circa 30-35 gradi).
Il lievito secco, invece, si presenta sotto forma di polvere e per poter essere utilizzato richiede di una riattivazione mediante una piccola quantità di zucchero o miele.


2) La preparazione del lievito: sia che si utilizzi il lievito fresco o quello secco e' buona regola prepararlo prima per consentire ai microrganismi che lo compongono di attivarsi e svolgere al meglio la loro funzione.
Pertanto, anche se in teoria il lievito secco può essere mescolato subito con gli altri ingredienti, e' preferibile procedere ad una riattivazione preventiva. A tal fine e' sufficiente mettere il lievito fresco o secco in una ciotolina, (se si usa lievito secco occorre inserire anche una presa di zucchero), aggiungere un poco d'acqua tiepida, mescolare fino al completo scioglimento e lasciarlo riposare fino a quando in superficie si formerà un'abbondante schiuma.

3) L'acqua in cui si scioglie il lievito deve essere tiepida (circa 30-35 gradi), mai fredda e neppure calda perché in quest'ultimo caso si uccidono i microrganismi presenti nel lievito.

4) La  farina: qualunque sia la marca che si usa, e' indispensabile ri-ossigenare la farina mediante l'uso del setaccio, in quanto nelle confezioni d'acquisto la farina rimane eccessivamente compressa per lungo tempo.

5) La doppia lievitazione. Contrariamente a quanto sostengono in molti, anche nella panificazione senza glutine e' consigliabile eseguire una doppia lievitazione. Pertanto, prima di fare la pezzatura del pane e dargli la forma desiderata, e' bene lasciare che l'impasto lieviti una prima volta fino a raddoppiare il suo volume. Successivamente, con le mani infarinate, si possono prelevare piccole parti dell'impasto e "rompendo" la prima lievitazione si rimpastano e si da' loro la forma desiderata (panini, baguette, focaccette). Dopo di che si mettono a lievitare in luogo caldo fino a quando avranno raddoppiato di nuovo il loro volume. Il procedimento della doppia lievitazione allunga i tempi di preparazione, ma garantisce un ottimo risultato finale.

6) Accelerare la lievitazione. Mantenendo fermo il principio della doppia lievitazione, si possono accorciare i tempi di preparazione del pane mediante piccoli, ma efficaci, trucchetti. La lievitazione deve sempre avvenire in luogo caldo, perciò si può accelerare il processo nei seguenti modi alternativi:

a. Mettere sul fornello una pentola piena d'acqua e quando questa raggiunge l'ebollizione, spegnere il fuoco e appoggiarvi sopra la teglia con il pane.
b. Accendere il forno a 50 gradi e mettervi dentro la teglia con il pane.
c. Aprire il microonde e senza farlo funzionare mettere la teglia all'interno del forno, accostare lo sportello in modo che la luce di cortesia resti accesa (quest'ultima crea un tepore che, unito al luogo ristretto in cui si trova la teglia, permette una lievitazione più veloce).
d. Coprire il pane con la pellicola e poi avvolgerlo con un plaid di lana.



7) Umidità costante: durante la 2^ lievitazione (quando e' già stata eseguita la pezzatura desiderata) e' opportuno mantenere la superficie del pane sempre umida, in modo che non si formino delle screpolature. A tal fine si deve spennellare il pane con acqua, olio o latte a seconda della ricetta che si deve realizzare, e mantenere la superficie umida fino al momento in cui la teglia viene infornata. Volendo e' possibile anche inserire nel ripiano basso del forno una teglia con un po' d'acqua, per mantenere l'umidità' anche durante la fase di cottura. Si tratta di un accorgimento non sempre necessario, perché le condizioni di cottura del pane variano anche secondo il grado d'umidità della stanza. Pertanto in una giornata secca sarà opportuno seguire questo piccolo accorgimento, mentre in una giornata umida lo stesso potrebbe risultare superfluo.


8) Temperatura del forno. Per cuocere il pane e' indispensabile una temperatura elevata, perciò il forno non deve mai scendere al di sotto dei 200 gradi.

9) Modalità di cottura. Coloro che possiedono un forno elettrico devono ricordare sempre che per la panificazione la cottura deve avvenire in modalità statica e mai ventilata. Si tratta di una regola fondamentale per la cottura di tutti i preparati contenenti lievito. Infatti, il forno ventilato crea immediatamente una crosta in superficie che non consente più di perfezionare la cottura interna del pane. Non vi sono, invece, problemi per il forno a gas, giacché esso non ha la modalità di cottura ventilata.

10)Il colore del pane. Il colore ambrato del pane può essere facilitato inserendo tra gli ingredienti di un poco di zucchero (in genere la stessa quantità in grammi del sale). Lo zucchero, infatti, durante la cottura si caramella e conferisce al pane un aspetto dorato.

Tips for baking gluten-free.
1 ) The type of yeast :

The dry yeast , instead , is in the form of powder and in order to be used requires a reactivation by a small amount of sugar or honey.

2) The preparation of yeast: whether you use fresh yeast or dry it’s 'good rule to prepare before microorganisms that compose it start carrying out their function.
Therefore, even though in theory the dry yeast can be mixed immediately with the other ingredients, is preferable to proceed to a reactivation preventive. To do this 'just put the fresh or dried yeast in a small bowl (if using dry yeast must also enter a pinch of sugar), add a little warm water, stir until completely dissolved and let stand until the surface will form a strong foam.

3) The water in which the yeast dissolves should be warm (about 30-35 degrees), never cold nor hot because in the latter case they kill the microorganisms present in the yeast.

4) The flour: whatever the brand you are using, is indispensable re-oxygenate the flour through the use of the sieve, as the flour remains overly compressed for a long time in the packaging .

5 ) The double rising . Contrary to what many say, even in baking gluten-free is advisable to perform a double rising . 6) Accelerate the rise. following the principle of double rising , you can shorten the time of preparation of bread by small but effective tricks. The rise must always be in a warm place , so you can speed up the process in the following alternative ways :

a. Put on the stove a pot full of water and when it reaches the boil, turn off the heat and lean over the pan with the bread .
b . Preheat oven to 50 degrees and put into the pan with the bread .
c . Open the oven and let it run without put the pan in the oven, pull the door so that the courtesy light remains lit ( the latter creates a warmth that , combined with the restricted place the pan in which it is located , allows a rising faster) .
d. Cover the bread with plastic wrap and then wrap it with a plaid wool.



7) Constant humidity : During the 2nd fermentation ( when it has already reached the desired size ) it’s appropriate to maintain the surface of the bread always wet , so do not form cracks. To this end it must brush the bread with water, oil or milk according to the recipe that must be realized , and keep the surface moist until the moment in which the tin is fired . It’s possible  also enter in the bottom shelf of the oven a pan with a little quantity of water, to keep moisture  during the firing phase . It’s a solution that is not always necessary , because the conditions of baking bread also vary according to the degree of humidity of the room . Therefore, on a dry day it will be appropriate to follow this little trick while on a wet day the same may be superfluous.


8 ) Temperature of the oven. To bake bread  is indispensable a high temperature , so the oven should not drop below 200 degrees.

9) How to cook . Those who own an electric oven must always remember that for baking cooking must be done in static mode and never ventilated . It is a fundamental rule for cooking all preparations containing yeast. In fact, the ventilated oven immediately creates a crust on the surface that does not allow the perfect  internal cooking of the bread . There are , however, no problems for the gas oven , since it does not have the convection cooking mod.

10) The color of the bread. The bread’s amber color can be facilitated by placing the ingredients a little of sugar (usually the same amount in grams of salt). Sugar , in fact, during cooking candy and gives the bread a golden appearance .
