Ingredienti per 4 persone:

Per il riso:
" 400 g. di riso
" 100 g. di burro
" 2 uova
" due cucchiai di pangrattato senza glutine
" 4 cucchiai di parmigiano reggiano grattugiato
" mezza cipolla
" sale q.b.
" 1 bicchiere di vino bianco
" 1 litro di brodo di dado


Per la salsa di funghi
" 50 g. di funghi secchi
" 50 g. di burro
" una cipollina
" mezza carota
" un gambo di sedano
" sale q.b.
" paprika q.b.
" pepe q.b.
" noce moscata q.b.
" mezzo bicchiere di marsala


Preparazione:

Preparare innanzitutto la salsa di funghi.
Fare rinvenire i funghi secchi lasciandoli in ammollo in acqua tiepida per almeno 1 ora.
Scolare i funghi, lavarli bene, strizzarli e tritarli grossolanamente.
In un tegame sciogliere il burro e il trito di cipolla sedano e carota precedentemente fatto (in questo caso le verdure devono essere tritate finemente).
Quando il battuto sarà ben rosolato e appassito unire i funghi aggiungendo la noce moscata e la paprika.
Cuocere per circa 7/8 minuti e poi versare il marsala. Lasciare evaporare il marsala e bagnare con il brodo di dado.
Coprire e cuocere a fuoco basso per altri 20/25 minuti mescolando di tanto in tanto.
Nel frattempo iniziare a preparare il riso.
Tritare finemente la cipolla e farla soffrigere con 40 g. di burro, unire il riso e farlo insaporire bene. Bagnare con il vino bianco farlo evaporare e continuare la cottura aggiungendo a poco a poco il brodo bollente.
Dopo circa 15 minuti, quando il riso e' ben asciutto, toglierlo dal fuoco e unire il parmigiano, il restante burro e le 2 uova battute.
Ungere 4 stampini spolverizzarli di pangrattato senza glutine e riempirli con il riso.
Infornare a 180 gradi per circa 10 minuti.

Sfornare gli stampini di riso e servirli caldi accompagnati dalla salsa di funghi.

" Un demi-verre de marsala


préparation:

Tout d'abord, préparer la sauce aux champignons .
Faire tremper les champignons séchés en les laissant tremper dans l'eau chaude pendant au moins 1 heure .
Égoutter les champignons , lavez-les bien , presser et les hacher grossièrement .
Dans une casserole, faire fondre le beurre et l'oignon haché , le céleri et la carotte préalablement faites ( dans ce cas, les légumes doivent être hachées finement ) .
Lorsque le rythme doré et flétries ajouter les champignons en ajoutant la noix de muscade et le paprika .
Cuire au four environ 7/8 minutes, puis versez le marsala . Laisser évaporer le marsala et verser dans l'écrou de bouillon.
Couvrir et cuire à feu doux pendant 20/25 minutes, en remuant de temps en temps .
Dans le même temps , commencer à préparer le riz .
Hacher finement l'oignon et faire revenir avec 40 g . de beurre , ajouter le riz et la saveur bien. Saupoudrer avec le vin blanc et laisser évaporer poursuivre la cuisson , en ajoutant graduellement le bouillon bouillant .
Après environ 15 minutes , lorsque le riz et ' sec , retirer du feu et ajouter le fromage parmesan , le reste de beurre et 2 œufs battus .

Zubereitung:

Zuerst bereiten Sie den Pilzsauce .
